We simply wanted to give a shake to the boring idea of the Classic Italian Restaurant.

So we came directly from Parma with this objective in mind.

Our MISSION is to share all the culinary traditions of the cuisine from PARMA and above all our starter experience: the very best CHARCUTERIE and CHEESE personally selected and imported only for our restaurant, such as Parma Ham and Parmesan Cheese, together with our beloved LAMBRUSCO, a slightly fizzy dry red wine strictly served strictly in BOWLS.

But also you cannot miss our typical HOME-HAND-MADE PASTAS from Parma cuisine, such as Anolini in Brodo and Tortelli d’Erbetta!

Don't worry, we also serve very authentic Lasagne and Tagliatelle Bolognese from the broader Emilia-Romagna region cuisine, honestly home-hand-made!

This doesn’t seem that special at first glance as Parma ham and parmesan cheese are both very well known, but there are plenty of other attractions at In Parma.

In Parma’s big hitters were just as good as I had hoped – the thin slices of Parma ham were musky and salty while the mozzarella was soft and milky.

Woody, nutty, salty slices of speck went wonderfully with the nutty, gently sweet muskiness of fontina cheese.

The woody, salty and nutty slices of speck mesh beautifully with the rich melted cheese and the soft polenta.

Soft and fluffy gnocchi served in a thin yet creamy cheese sauce looked like mac and cheese, but were even more comforting despite the minimal presence of the promised speck.

In Parma is not a very big restaurant.

It’s not a very big space,  the room is dominated with a bar on the right, a cosy nook in the window and a few smaller tables at the back.

The menu is like a culinary tour of the best of small producer in and around Parma in Italy.

We then shared a plate of pasta with walnut pesto and a plate of polenta with ragu from their daily specials.

You must go and feast on the Culatello, aged red cow Parmigiano and if they have it the walnut pesto pasta.

The city of Parma and its surroundings have long been favourites among the many fans of authentic Italian cuisine.

This ensures you’re being served nothing but the finest and most authentic foods from Italy.

Rather than homogenous, non-specific "Italians" (there's no such thing as "Italian" food, of course: there's Ligurian or Aostan or Sardinian…), more and more restaurants are concentrating on one regional cuisine.

There's wild boar pasta "alla chitarra", cut on guitar-like wires so that the strands have squared edges, the ragù slow-cooked and honking with wine and herbs.

A red Berkel meat slicer and dangling charcuterie give hints to the provenance.

These, with bowls (called fojete) of dry, lightly fizzy red Lambrusco Monte Delle Vigne and some first-rate focaccia, would make an excellent meal, but we persevere with the homemade pasta: delicate parcels of herbed ricotta in sage butter, and, yes, lasagne – a damned fine version, too, creamy and scented with nutmeg.

In Parma is run by an outfit called Food Roots – manned entirely, I suspect, by the animated, curly-haired chap hairdrying the customers with his enthusiasm – dedicated to PDO (protected designation of origin) food from small producers.
